Aging: 100% barrel fermented and barrel aged for 24 months in French oak. 100% new French oak.
Harvested September 9th at 23.5 Brix. Two yeast strains were used and fermented in two seperate tank/barrel lots for added complexity and fruit characteristics. 100% estate fruit, 100% barrel fermented. Sur Lie aging and Batonnage (lees stirring during the fermentation stage).
