Composition: 100% Pinot Gris
Aging: 100% Stainless Steel
Interesting Facts: Harvested August 20th at 23.7 Brix. A french yeast strain was used to add more complex flavors. Slow 15 day cold fermentation in stainless steel tank with temperatures from 57-63 degrees Fahrenheit.
