Late harvest wines require a bit of patience, but the result is definitely worth waiting for. That extra time the grapes spend on the vine results in a smooth and sensuous treat brimming with late summer fruit - black cherry, wild strawberry and black raspberry jam all dusted with spicy cinnamon and a hint of licorice. Interesting Facts: Picked on November 5th at optimum sugar levels of 27.0 Brix for the ranch vineyard, which is planted with Bordeaux clone 8. A slow cooler fermentation 63-68 degrees F to express a better varietal and fresh fruit character. Fermentation was arrested/stopped at 13.6 Brix to attain the specific amount of residual sugar.
